Steam Rice Recipe - Phara

Saut� (with out mixing any thing) the rice flour for 2 minutes. Make dough of it with warm water. Cover it with a wet cloth and keep aside.
Soak the Chana Dal for two hours.

Make the paste of it with Ginger, Garlic, tamarind, asafetida, chilli and salt.

Take small amount of dough and roll it. Cut with the help of a glass into circular pieces (as you do for making Puri).

Put small amount of paste into it and fold in like Gujiya (see the shape in figure 1), but do not paste it.

Take water in a vessel and boil it. Keep the sheave (as per fig 2) on the vessel and place the filled Phara on it (ref. Fig 3). Let it be steamed for 10 minutes.

Take it out from the sheave and apply few drops of Desi ghee. Serve with Green Coriander (Dhaniya) Chatni.

5-6 Cloves of Garlic

1Sspoon tamarin

Pinch of Asafetida

3 Green chilli
